Visits from my grandparents meant one thing for me when I was growing up, rainbow cookies. Everytime they came over, without fail, they would have a big box of them, along with a few quarts of matzo ball soup and several clippings from the New York Times.
I’ve always loved these cookies. They manage to be soft and moist, but still have a pleasantly chewy texture. The mix of marzipan, jam, and chocolate, when created in perfect ratio, is delicious. And the colors? Sure artificial food coloring is “bad for you”, but hey! It’s totally part of the appeal.
When I tried the rainbow cookie cake from Fusion Bakery, it was love at first bite. Imagine, for someone who has been passionate about rainbow cookies all her life, the joy I felt when I saw a huge, cake-size version of my favorite treat. Saying that they do it justice would be an understatement. It’s perfectly moist, and soft, so that it doesn’t crumble when you stick your fork in, but melts the second it hits your tongue. The jam ratio is wonderful. You taste it, but it doesn’t override the authentic marzipan. The chocolate top gives a nice contrast in texture, although it is no way hard, and the size? Unless you’re feeling particularly gluttonous, definitely big enough for two.
The rainbow cookie cake isn’t a daily item on Fusion’s menu, but maybe if ALL of us ask for it, it will become one.
Talk about a wonderful quick bread. This one truly takes the cake.
