We had the gang over for a Memorial Day barbeque yesterday and along with the usual cookout fare I had to come up with a Vegan protein item. I could have done my black bean burgers, everybody raves about them, but I decided to change it up a bit. Not much difference between black and white bean burgers you might say, but if you compare recipes you will see they are quite different.
This recipe will yield 4 good size burgers, but you might want to double up the recipe if you are having a crowd over. They will become quite popular.
Ingredients:

1 can cannellini beans drained and rinsed
1/2 cup diced onion

1/2 cup diced bell pepper
1/2 cup diced carrot
1/2 cup diced celery
4 cloves of garlic minced
1 tablespoon minced chives
1 tablespoon chopped fresh parsley
2/3 cup of panko breadcrumbs
1/4 teaspoon each of salt and pepper
2 teaspoons creole seasoning I use Emeril's
extra virgin olive oil
1 egg plus 1 yolk lightly beaten.... for vegan: 1 tablespoon plus 1 teaspoon ground flax seed combined with 31/2 tablespoons of water lightly beaten.
Your favorite rolls, garnishes and condiments for serving.
To Prepare:
In a nonstick skillet heat enough olive oil to coat the bottom of the pan and saute the vegetables until soft about 3 to 4 minutes. you want to gently cook the vegetables. You do not want them browned. Set aside to cool. In a medium size bowl add the beans and mash with a potato masher. Stir in all remaining ingredients and mix well.
Form into 4 equal size patties (To make the patties you can use your hands or make a mold by cutting the bottom and top off of a tuna can) Place
patties onto a small tray cover and refrigerate for al least 30 minutes. This will help to firm up the burgers and make them easier to handle.
When ready to serve heat enough olive oil to coat the bottom of a nonstick pan and cook the burgers until golden brown, approximately 2 to 3 minutes per side. Serve on rolls with your favorite toppings and condiments.
I have yet to try these on the grill, but if you do I recommend using a grill basket. The burgers are delicate. Enjoy!
