Lemon-Herbed Potatoes Perfect for Grill

Yukon Gold potatoes perfectly complement herbs fresh from the garden in this recipe that cooks itself on the gas grill or hibachi.

Want a great recipe that's sure to become a family favorite this summer?

Try Lemon-Herbed Potatoes. Here's the scoop:

Scrub 2 lbs of Yukon Gold potatoes with sponge. 

Place potatoes in bowl, and put in microwave for 90 seconds to soften (optional).  Then, cut and place potatoes in a large Ziploc bag. In a separate bowl, add:

  • ¼ cup of chopped, mixed herbs (such as parsley, oregano, rosemary, chives and basil)
  • 1 garlic clove, smashed
  • 1/2 cup of extra-virgin olive oil
  • 1 lemon wedge
  • A pinch of salt and pepper
Pour contents of the bowl into the Ziploc bag full of potatoes and mix.  Cook on grill pan for about 20 to 25 minutes (at about 350 degrees), or until crisp. Mix potatoes periodically. Enjoy!
