Tasting Notes: Three New Beers From Stubborn Beauty Brewing Company

A little while back at Eli Cannon's Tap Room, Stubborn Beauty Brewing Company victoriously unveiled three brand new beers: Two Headed Boys, Australopithecus, and the big stout Singularity. I tried the Australopithecus first.
This beer pours out a murky, golden opaque color. Smelling faintly of fruity sweetness with a hint of hopping, this beer pulls very dry and slightly bitter with an overtone of dried fruits. The taste here has a continual dryness, hitting a mild hop burst that is dry and semi-bitter. From here the taste exits smoothly with a slight hopping note filled with a dark curranty/apricot overtone. This is a medium to light beer, dry, and filled with great dried fruit notes. An easy-sipping American IPA, this is an excellent spring beer and leaves a pleasant, slightly semi-bitter hop note on the back end.

Two-Headed Boy pours out a root beer brown color with a slightly-carbonated, bright head. This beer smells malty and sweet and moves quickly to a dense bitterness that's tinged with rich curranty malting. From here the taste progresses to a malty sweet mid point until the malting drops out and I'm left with a slightly bitter, dark hopping that lingers for a minute and then vanishes. This is a medium, bitter, but evenly balanced beer with more of that ruch dried-fruit sweetness that makes the profile largely even. This is a great beer with something for everyone: pointed bitters and dense malting.
Last up was Singularity, which I think was the greatest success of a very successful launch overall. This beer pours out a dense black/brown color with a relatively flat head. This beer smells rich, sweet, and slightly malty. At first sip this beer explodes with sweetness, richness, and dense dried-fruity notes. This heady sweetness is cut almost immediately with a hefty bitterness that equalizes the taste profile. From here the large bitter, fruity tone lingers on the palate until slowly fading away with just a kiss of alcohol lingering on the back end. This beer is very heavy! Singularity is a warm, heavy sipper that hugs the palate with rich dried currants and thick malting, all balanced by a wide swath of balancing bitters. This beer lingers with toasted malts and dark hops. Similiar to World Wide Stout, I can't recommend this beer enough -- it's a true accomplishment to the stout style!

Stubborn Beauty just keeps on impressing me with their innovative, delicious, and rather large beers.
