Whether Your Celebration is Small or Large: What to Cook for Pesach This Year

Whether your seder is small or you have a large group celebrating with you, give these recipes a try for something new during this year's Passover celebration.

Challah bread: This first recipe is a given for any Shabbat or holiday. However, I hope you have more luck than I do at baking challah. Mine never seems to rise.  Ever. This recipe claims to be easy for “the working woman or homemaker.” It also explains how to make the dough into pizza dough or cinnamon rolls, so it’s a multi-purpose challah.

Matzo Ball Soup: This Epicurious recipe puts a spin on traditional matzo ball soup.  According to the website it’s a “fun, funky twist on a very traditional dish.”  Chef Susie Fishbein adds tomato, spinach and turmeric to make this tricolor soup one-of-a-kind.

Gefilte Fish: Kashrut.com offers several different ways to prepare gefilte fish.  Whether you want this traditional dish sweet, fried, or any number of ways, this web page provides five different recipes for this traditional Pesach food.

Low-Fat Mock Chicken Soup and Vegan Matzah Balls:  Do you have a vegetarian or vegan in the family? Never fear, there is a recipe for almost mock everything on the web, and chicken soup and matzah balls are no exception.  Try this uncomplicated recipe to satisfy the herbivore at your seder.

Caramel-Topped Pears:  For something sweet, give this fruit dish a try. The recipe comes in regular or pareve versions, so you’re covered. The chef, Eileen Goltz, studied at Le Cordon Bleu in Paris so the recipe has a French flair you can add to your Pesach.

Give one of these (or all of these) recipes a try during your Passover week and add something different to the traditional meals you serve.  And mazel tov with your challah bread.  May it rise spectacularly!
