City Man Taps Maples in Urban Sugaring Project

Middletown's North End may have a dwindling number of such trees but that's no hurdle for one resident who's found sweet success with 80-year-old maples whose sap has been running since the first of the year.

One industrious North End homeowner has discovered the sap of 80-year-old maple trees adjoining his property has been running since the first of the year, thanks to a mild winter, according to a story in the Hartford Courant.

Since then, Shane Grant, 40, has been tapping several trees and gets up to a half-gallon of sap a day and boils it down to a light amber maple syrup with his 7-year-old son MacKenzie. He's even made maple sugar candy crystals — a granulated version that's easily portable as a sweet treat.
